Easy Apple Cake

Happy apple season everyone!!!!! Went to the apple orchard yesterday.........and it was really crowded! I stayed out of the 'pie room'.......that place is dangerous! Sooo.....I'm trying to come up with some new apple recipes and have been chatting about this one. The question was.....with or without nuts......and with nuts won! So here it is! I just took mine out of the oven about an hour ago and tried a teeny-weeny piece and it is sooooo good!!!! I hope you all enjoy it! I think it's a keeper!!!

EASY APPLE CAKE
Makes 15 Servings
1 Serving = 4 PointsPlus™ with nuts
1 Serving = 3 PointsPlus™ without nuts

1 1/4 cup Splenda granulated
2/3 cup unsweetened applesauce
3/4 cup fat-free egg substitute
1/4 cup canola oil
1 1/4 tsp vanilla extract
2 cups all-purpose flour
1/2 cup ground flax
1 1/4 tsp baking powder
1 1/4 tsp ground cinnamon
1 tsp salt
1/4 tsp baking soda
2 cups finely chopped & peeled tart apples
1/2 cup chopped walnuts

In a large bowl, beat Splenda, applesauce, egg substitute, oil & vanilla until well blended.

Combine flour, flax, baking powder, cinnamon, salt and baking soda. Gradually beat into Splenda mixture until blended. Fold in apples and nuts.

Transfer mix to a 13 x 9 baking dish coated with non-stick spray. Bake at 350 degrees for 28 - 35 minutes or until a wooden toothpick inserted in the center comes out clean. Cool in the baking dish on a wire rack.

You can eat this 'as is' or put a 'dollop' of Fat-Free Cool Whip on it. Either way....it's good! Seriously!

MY SPIN: Of course I put in more cinnamon than is called for!!!
