Pumpkin Chili

I know.....I know.....you're thinking 'ick', right?  Well get that thought out of your head.....this stuff is good! The pumpkin gives it such a nice flavor. Seriously.....try this. Or make your own version of chili and add a can of pumpkin.

PUMPKIN CHILI
Makes 8 Servings
1 Serving = 1 Cup = 4 PointsPlus™


1 lb lean ground beef
1 can (15 oz) dark red kidney beans
1 can (15 oz) light red kidney beans
1 can (14.5 oz) diced tomatoes
1 can (15 oz) pumpkin (NOT pumpkin pie filling)
1 cup beef or vegetable broth
1 medium onion, diced
1 green pepper, diced
1 (or 2) garlic cloves, diced
1 tsp cumin
1/2 tsp chili powder
1/2 tsp salt
1/2 tsp pepper
1 tsp dried cilantro
1 tsp dried oregano


Add beef, salt & pepper to a soup pot or Dutch oven. Brown meat.

Add onion, green pepper & garlic. Cook until 'tender'.


Add the rest of the ingredients.

 
Stir well. Bring to a boil and then simmer for at least 1 hour, stirring from the bottom every 10 – 15 minutes.
 

MY SPIN: You can add more onion, pepper, garlic and spices to you own taste.
