Pam's Pumpkin Cookies

Hey everyone! These are yummy chewey cookies. Thanx to my niece Pam for these. Like she always says......if the batter is good, the finished product will be good. She's so right!!!!

PAM'S PUMPKIN COOKIES
Makes 48 Cookies
1 Cookie = 1 PointsPlus™

5 cups whole wheat flour
2 tsp baking soda
2 tsp baking powder
2 tsp salt
4 tsp cinnamon
1 tsp nutmeg
1 tsp cloves
1/2 tsp ginger
1 15-oz can pumpkin (NOT pumpkin pie stuff)
2 cups unsweetened applesauce
1/2 cup fat-free egg substitute
2 cups Splenda granulated

Preheat oven to 350 degrees.

Mix all ingredients together.

Place about a teaspoonful on a cookie sheet and 'smoosh' it down (aka flatten it....I like smoosh). They're NOT going to expand (and neither is your waistline if you don't overindulge in these yummy cookies!).

Bake @13 minutes.

Cool on a rack.

Enjoy!!!!
