Peach Bread

Good Thursday morning everyone!!! Went 'up the mountain' yesterday and bought another basket of peaches.....even tho' I still had some in the fridge that were getting pretty (over) ripe. Not wanting to waste food, especially yummy peaches, I decided to try a new Peach Bread recipe. It's good folks!

PEACH BREAD
Makes 10 Slices
1 Slice Without Nuts = 4 PointsPlus™
1 Slice With Nuts = 5 PointsPlus™



2 cups all purpose flour
1/2 cup Splenda granulated
1/2 cup brown sugar, packed
1/8 tsp salt
1 tsp baking soda
2 TBSP milled flax seed (optional)
2 cups very ripe mashed peaches (5 or 6 medium)
1/4 cup fat-free egg substitute
2 TBSP melted I Can't Believe It's Not Butter
1/2 cup nuts (optional)

In a medium bowl, mix flour, Splenda, brown sugar, salt, flax seed and baking soda.

Put mashed peaches in a large bowl. Add egg substitute and I Can't Believe It's Not Butter. If you're going to put nuts in this, stir in the nuts. Stir in the flour mixture.

Spoon into a 9x5 sprayed loaf pan. Let sit for 20 minutes.

Bake at 350ยบ for 45 - 55 minutes.

Cool in the pan for 15 minutes; remove from the pan and cool completely on a rack. Enjoy!!!

MY SPIN: I didn't mash the peaches.....I chopped them up. I'm addicted to cinnamon, so I think this would be even more delicious if you sprinkled some (for me it would be ALOT) cinnamon in with the peaches. And if you have more than the called-for amount of peaches on hand, I don't see where it would hurt to add them (mine was a little more than 2 cups). If you opt to not use flax seed, it won't change the PointsPlus™ value.
