PUMPKIN BARS
Makes 30 Servings
1 Serving = 3 PointsPlus™
2 cups Splenda granulated
1 cup unsweetened applesauce
1 (15 oz.) can pumpkin (NOT pie filling)
2 cups white whole wheat flour
2 tsp baking powder
2 tsp ground cinnamon
1 tsp baking soda
1/2 tsp salt
1/2 tsp ground ginger
1/4 tsp ground cloves
FROSTING:
8 oz. Neufchatel cream cheese, softened1/2 cup light butter, softened
1 tsp vanilla
1 cup powdered sugar
Preheat oven to 350ยบ. Spray bottom & sides of a 15x10x1-inch baking pan.
In a large bowl, beat egg substitute, Splenda granulated, applesauce and pumpkin with electric mixer on medium speed until smooth. Stir in remaining ingredients.
Spread evenly in baking pan. Bake 25 – 30 minutes or until golden brown. Cool completely in pan on rack, @2 hours.
For Frosting: In a medium bowl, beat cream cheese, butter & vanilla with electric mixer on low speed until smooth. Gradually beat in the powdered sugar until smooth and spreadable.
