Makes 1 Serving
1/2 cup pumpkin (NOT pie filling)
1/4 fat-free egg substitute
1/2 tsp pumpkin pie spice
1/2 tsp vanilla extract
1 TBSP brown sugar
Combine all ingredients in a small bowl using a whisk. Pour into a small mug or ramekin.
Microwave for 3 minutes until firm.
Serve 'as is' or topped with a dollop of fat-free whipped topping.
