BANANA BLUEBERRY MUFFINS
Makes 12 muffins
1 muffin = 2 PointsPlus™
1/4 cup fat-free egg substitute
1/2 cup fat-free milk
1/3 cup unsweetened applesauce
2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 cup blueberries
Preheat oven to 350º. Spray muffin pan; set aside.
Beat together the mashed bananas and egg substitute until creamy.
Add milk and applesauce; beat well.
Add flour, baking soda and baking powder; beat well.
Gently fold in the blueberries.
Spoon into muffin pan.
Bake 23 minutes or until lightly browned.
Cool on rack.
