Welcome to Tweaked at Chez Jan de la Dayton....translated to 'tweaked at Jan's house in Dayton'! Sounds fancy, but it's not. If you choose to share a recipe, be kind and give me kudos for it. The pictures are NOT to be taken off this blog unless used in a direct link to this blog. Once upon a time I was a Weight Watchers leader....that chapter is closed. But I still like to eat and bake and don't like the weight that finds its way to me too easily. So I go find delicious-sounding recipes and tweak them. Some recipes, however, just don't turn out right if they're tweaked. I've not posted anything....so far.....that isn't WW friendly. That might change, and I'll warn you if I post something with 'scary' P+ values. For those who don't use substitutions, the ratio for Splenda granulated/sugar is 1:1 and the ratio for egg substitute/eggs is 1/4 cup of egg sub = 1 egg. NOTE: The Points Values on these recipes are OLD, so figure the new ones out on your own. I'm no longer with WW. Now.....let's have some fun in the kitchen!!!

Apple Cake

                                                         APPLE CAKE
                                                    Makes 16 servings
                                PointsPlus™ per serving at the end of this

Prep Time:  @20 minutes
Cook Time:  1 hour and 15 minutes
Level of Difficulty:  Easy  

1 1/2 cup unsweetened applesauce
2 cups Splenda Granulated Sweetener
3/4 cup fat-free egg substitute
1 tsp vanilla extract
1 tsp baking soda
1 tsp table salt
1 tsp ground cinnamon
3 cups whole wheat flour
3 cups chopped apples
1 cup chopped walnuts 

Preheat oven to 350 degrees. 

In a large mixing bowl, mix applesauce and Splenda.  Beat in egg substitute. 

In a separate bowl, mix together flour, salt, soda and cinnamon.  Stir flour mixture into egg mixture.  Add apples, nuts and vanilla.  Mix well; batter will be VERY stiff. 

Bake at 350 degrees in a Bundt or Lodge (cast-iron) cake pan for 1 hour and 15 minutes or until done. 

Top of cake will be crusty and needs no topping.

If you make this without the chopped nuts, it's 3 PointsPlus™ per serving.
If you make this with the chopped nuts, it's 4 PointsPlus™ per serving.  

MY SPIN:  A friend of mine made this and instead of 2 cups of Splenda she did 1 cup Splenda granulated and 1 cup Splenda brown sugar. Also, whenever there's cinnamon in a recipe I always put more than is called for.....love cinnamon! And when you put the batter in the pan, try to smooth it out so it bakes nice and evenly.
