CHICKEN WITH MUSHROOMS & SPINACH
Makes 4 Servings
1 Serving = 6 PointsPlus™
4 boneless/skinless chicken breasts (@5 oz each)
salt & pepper to taste2 cloves garlic, minced
1 (15 oz) can diced tomatoes, drained
1 (5 oz) bag of baby spinach
2 cups thinly sliced mushrooms
1/3 cup grated Parmesan cheese
- Season chicken with salt & pepper.
- Coat large non-stick skillet with spray and place over medium heat. When it's hot, add chicken and cook 5 - 10 minutes or until it's no longer pink and the juices run clear.- Remove the chicken to a plate, cover to keep warm.
- Add the garlic to the skillet; cook 2 - 3 minutes or until garlic becomes fragrant. Add the tomatoes, spinach & mushrooms. Cook @3 minutes or until liquid is reduce by about half.
- Put chicken back in the skillet and stir the vegetables over/around the chicken. Sprinkle Parmesan cheese over all.
- Serve.
MY SPIN: I didn't use any 'salt to taste'......I try to stay away from salt. I would also use more garlic.....love the flavor of fresh garlic!! The spray I used was the olive oil flavored spray. Also, the recipe originally called for the chicken to be cut into 1" pieces.....but I didn't feel like doing that!!!
