STRAWBERRY MUFFINS
Makes 12 Muffins
1 Muffin = 2 PointsPlus™
1/4 cup unsweetened applesauce
1/2 cup fat-free milk1/4 cup egg substitute
1/2 tsp salt
2 tsp baking powder
2 tsp ground cinnamon
1/2 cup Splenda granulated
1 3/4 cups all-purpose flour
1 1/2 cups chopped strawberries
Preheat oven to 375 degrees.
In a small bowl, combine applesauce, milk and egg substitute. Beat lightly.
In a large bowl, mix flour, salt, baking powder, cinnamon and Splenda. Toss in chopped berries and stir to coat with flour. Pour in milk mixture and stir together.
Fill 12 paper-lined muffin cups.Bake @25 minutes or until the tops bounce back from the touch.
Cool 10 minutes and then remove from the pan.
MY SPIN: The muffin recipe originally called for 1 cup of chopped berries and no cinnamon but I added 1/2 cup and the cinnamon for my own taste. It also originally made 8 muffins, but doing it 'my way' is still a nice muffin and has more flavor.
